Honey Oatmeal Bread
It's storming again on PEI (shocking, I know) and I think one of the best ways to fight cabin fever is with yummy food. In particular homemade bread! I love Oatmeal Molasses Bread and make it often, so I thought I'd make a couple loaves to help pass time today. Unfortunately we are all out of molasses, but luckily had plenty of honey, so I just made a few changes to the recipe and came up with this yummy alternative. Here's the recipe!
2 cups boiling water
1 cup of oatmeal
1/2 cup of honey
2 tbsp butter
1 tsp salt
Combine the above ingredients in large mixing bowl. Let set for 1 hour.
2 1/4 tsp Active Dry Yeast
1/2 cup warm water
1 tsp white sugar
In small bowl dissolve the above ingredients for 10 minutes, until frothy. Add yeast mixture to oatmeal mixture and mix well.
4 cups flour
Add flour 1 cup at a time. Mix well then knead until smooth and elastic (at least 10 minutes). Cover with a damp towel and let rest in a warm place for an hour to rise.
When done rising, transfer dough to lightly floured surface. Separate into four even rounds of dough, and place two rounds in each pan. Cover with a damp towel and let rest in a warm place until doubled in size (approximately 45 minutes).
Bake in preheated oven (350 degrees) for 30 minutes, until top is golden brown. Let cool on cooling racks and serve.
